I Can't Tell if this Printer is All Hype!

Yeah that is especially true of Creality. Creality’s machines sent to reviewers are assumed to be better inspected. Ever hear of the Creality lotto? If you are lucky you get a great working K2 but if you aren’t lucky you get a pain in the but K2 with problems. Reviewers usually win the Creality lotto.

Recommendation, H2S vs P2S vs K2 Plus. Or something else?

I wish I had seen a comment like this a year ago. We got a k2 for our office, worked great for like 6 months but now it shits itself after every other print and I’ve never been closer to painting the walls with brain.

Which 3D printer is the best for me

Prusa has the best future proofing for their printers, this is undisputed. The mk4 is a solid workhorse but a bed slinger, so isn't as fast as the core x-y printers. The core one is likely to be the same quality-wise and more competitive with the other core x-y printers. I still hear there's some issues with the XL and it's the most expensive of the lot. Bambu Lab printers are solid workhorses and are well ahead in the market when it comes to overall ease of use and their ecosystem. You couldn't really go wrong with a Bambu Lab printer. However, you're going to be fully enveloped into their ecosystem.They do more to reduce compatibility with 3rd party hardware and software than just about any other manufacturer does. It's just that it's not a big deal because what they sell is pretty good. The H2D is still going through some teething issues but they'll sort it out. Bambu's AMS is also the best multi colour/filament system on the market if that's something you'd use. Creality had the market cornered for cheap printers until Bambu came along. Their printers are fine (I still have K1 max) but they have their issues. They're actually ok but you're going to have to be willing to do some mods to get the most out of it. I'd really ask on their forums for current advice on the K2's reliability. It's much cheaper than the H2D or XL but offers the same size and performance. I don't know how well their AMS works. Hope that helps a little. Personally, I've had Prusa, creality and Bambu printers and now I'm more likely to recommend Bambu, unless you can afford a Prusa. I'd probably own a core one if it wasn't more expensive than an X1C where I live, which is almost double the cost of the P1S I have.
